Sushi Waffles with Smoked Alaska Salmon
Ingredients
- 1 cup sushi rice
- 2 tablespoons rice vinegar
- 2 teaspoons sugar
- 4 slices Echo Falls Smoked Wild Alaska Sockeye Salmon, cut into pieces
- ½ avocado, mashed with a splash of lemon juice
- ½ red onion, chopped
- ½ lemon, juiced
- 2 tablespoons fried onions
- Optional: sesame seeds, hot sauce, roasted onions
Directions
1. Prepare the rice
Cook sushi rice according to package instructions. In a small bowl, mix rice vinegar and sugar until dissolved. Let the rice cool, then stir in the vinegar mixture
2. Make the waffle base
Grease a waffle iron and spread the sushi rice evenly. Cook for about 8 minutes, or until crispy and golden.
3. Assemble the toppings
Top the crispy rice waffles with mashed avocado, chopped red onion, and smoked salmon.
4. Finish and serve
Drizzle with lemon juice and garnish with fried onions. Add sesame seeds, hot sauce, or roasted onions if desired.
