Hot Smoked Coho Skewers with Apple Spinach Salad
Ingredients
- Echo Falls Hot Smoked Coho Salmon Trio Pack (1 Traditional, 1 Cajun, and 1 Cracked Pepper), flaked into bite-sized chunks.
- Skewer sticks
- 1 loaf of fresh Focaccia Bread (optional, as a side)
- 1/2 cup Dill Chèvre Cheese
- 4 Cups of Spinach Leaves
- 2 TBS canola oil
- 2.5 tbs apple cider vinegar
- 1 tbs sugar
- 1/4 tsp salt
- 1/4 cup red onion (chopped)
- 1 medium apple (tart, cut into bite-size chunks)
Directions
Step 1: Make the Apple Spinach Salad
- Wash the spinach, tear it into bite-sized pieces, and place in a large bowl.
- Break the Dill Chèvre Cheese into bite-size pieces and add to the bowl with spinach.
- In a small bowl, mix oil, vinegar, sugar, and salt.
- Add the chopped apple and onion to the oil mixture and toss to coat. Let stand for 10 minutes.
- Combine ingredients in the large bowl of spinach.
Step 2: Make the coho skewers
- Flake each of the 3 coho flavors into bite-sized pieces.
- Skewer the individual chunks, alternating the Cajun, Traditional, and Cracked Pepper flavors.
- Serve alongside Apple Spinach Salad and fresh focaccia bread.
